Perfect veggie meal for the summer. Oh, did I mention it's super easy!
Ingredients:
2tsp Tandoori paste
2tsp Natural yogurt
300g of tofu, cut into cubes
1 large red onion, sliced into wedges
1 yellow pepper, cut into chunks Handful of button mushrooms
First mix the tandoori paste and yogurt in a bowl.
Cut the tofu into cubes and add to the tandoori-yogurt mix, make sure all the tofu is covered in the paste, then place in the refrigerator for 2h.
2h later......
Cut the red onion into wedges then brush with olive oil.
Cut the yellow pepper into chunks and brush, do the same with the button mushrooms.
Place tofu, peppers, onion and mushroom onto skeweres in any order. Heat the grill or BBQ, cook the skeweres for 10-15mins.
Just serve with some rice or a salad, what ever you prefer. I'd recommend mixing mint, lemon juice and a bit of olive oil to some natural yogurt for the perfect dip to accompany the tofu skewers!

Vanilla cupcake with Nutella filling!
For my first post I made filled cupcakes!
Here's the recipe:
Makes 12
110g self raising flour (sifted)
110g caster sugar (personally I use less as I don't like them too sweet, this is up to you)
110g margarine (softened)
1tsp baking powder
2 large free-range eggs
1tsp vanilla essence
Pre-heat oven 160'c
Mix all together in a bowl until creamy consistency using an electrical whisk
Scoop into casings and bake for 20mins until golden brown
Nutella filling:
225g icing sugar (must be sifted!)
50g unsalted butter
50g nutella
Cut out a circle from the top of the cupcake, scoop out the cake
being careful not to break the circle, trim off excess cake on circle so that you are left with a 'cake lid'
Fill the hole with nutella icing and then put the circle lid back on top
Then cover the cupcake with either nutella icing or any other icing you fancy!
I went for nutella icing in top with crushed nuts! :)
