Tandoori Tofu Skewers

Perfect veggie meal for the summer. Oh, did I mention it's super easy!

Ingredients:
2tsp Tandoori paste
2tsp Natural yogurt
300g of tofu, cut into cubes
1 large red onion, sliced into wedges
1 yellow pepper, cut into chunks Handful of button mushrooms


First mix the tandoori paste and yogurt in a bowl.
Cut the tofu into cubes and add to the tandoori-yogurt mix, make sure all the tofu is covered in the paste, then place in the refrigerator for 2h.
2h later......
Cut the red onion into wedges then brush with olive oil.
Cut the yellow pepper into chunks and brush, do the same with the button mushrooms.
Place tofu, peppers, onion and mushroom onto skeweres in any order. Heat the grill or BBQ, cook the skeweres for 10-15mins.

Just serve with some rice or a salad, what ever you prefer. I'd recommend mixing mint, lemon juice and a bit of olive oil to some natural yogurt for the perfect dip to accompany the tofu skewers!
